Wine

Thanks to our land and our natural resources, in 1997 we were able to realise our dreams : share with you our passion for the wine.
In the respect for the tuscan tradition we produce 4 red wines, 2 white wines,1 rosé wine and 2 grappas.
Every day we work and care for each detail to achieve our goals by respecting our philosophy :

Goccia Volterrana Red Wine Toscana I.G.T.


Grape variety: Sangiovese, Cabernet Sauvignon, Canaiolo

Exposure: south / south-east
Soil: hilly land with clay textured soil
Growing system: cordon trained
Average vine production: 1,5 kg of clusters


Wine making: grapes are hand-picked and pressed on the same day. The alcoholic fermentation takes place at a controlled temperature of 26/28°C. Before
bottling the wine remains in French oak barrels for at least 13 months. At least 30 months of ageing in
the bottle.
Tasting notes
Visual aspect: bright ruby red
Nose: developed, naso evoluto, matured, austere. Spices and fruit hints, well integrated with a
balanced woody aroma
Palate: long, robust, elegant
Serving temperature: 16-18°C
Food pairing: excellent with traditional Tuscany dishes such as pasta with meat or mushrooms
sauce. Good with meat dishes, fried vegetables, and matured cheeses.

Intensivo Red Wine Toscana I.G.T.


Grape variety: Sangiovese 100%


Exposure: south / south-west
Soil: hilly land with clay textured soil
Growing system: cordon trained
Average vine production: 1.5 kg of clusters


Wine making: grapes are hand-picked and pressed on the same day and the juice spends 20 days on
the skins. The alcoholic fermentation takes place. Before
bottling the wine remains in French oak barrels for at least 14 months. At least 30 months of ageing in
the bottle.
Tasting notes
Visual aspect: bright ruby red
Nose: important nose, spices and wood are well balanced, this high quality wine evokes comparisons
with other famous italian red wines
Palate: mouth broad and balanced, full-bodied, a fine acidity and well integrated French oak add a
touch of elegance to this ripe and rich wine.
Serving temperature: 16-18°C
Food pairing: excellent with traditional Tuscany dishes such as pasta with meat or mushrooms
sauce, roast fowl, soups and mature cheeses.

Anima Red Wine Toscana I.G.T.


Grape variety: Cabernet Sauvignon 100%


Exposure: south / south-east
Soil: hilly land with clay textured soil
Growing system: cordon trained
Average vine production: 1,5 kg of clusters


Wine making: grapes are hand-picked and pressed on the same day and the juice spends 20 days on
the skins. The alcoholic fermentation takes place at a controlled temperature of 26/28°C in stainlesssteel
tanks. 30 months barrique ageing in French oak barrels. At least 30 months of ageing in the
bottles.
Tasting notes
Visual aspect: bright ruby red with garnet-colored hints
Nose: this high quality Cabernet Sauvignon has an elegant touch of wood due to the barrique ageing,
and a long lasting aroma of spices. It reminds internationally renowned red wines.
Palate: the well integrated French oak add a touch of elegance to this ripe and rich wine. Smooth and
long finish.
Serving temperature:
16-18°C
Food pairing:
excellent with meat based dishes such as roast meat, grilled meat and fowl

Armonia Red Wine Toscana I.G.T.


Grape variety: Sangiovese, Montepulciano, Foglia Tonda


Exposure: south / south-east
Altitude: 400 meters above sea level
Soil: hilly land with clay textured soil
Growing system: cordon trained
Average vine production: 2 kg of clusters


Wine making:
grapes are hand-picked and pressed on the same day and the juice spends 15 days on
the skins. The alcoholic fermentation takes place. Before
bottling the wine remains in stainless-steel tanks for ten months. At least six months of ageing in the
bottle.
Tasting notes
Visual aspect: bright ruby red
Nose: young, fresh and fruity
Palate: balanced, with a clean finish
Serving temperature: 16-18°C
Food pairing: a pleasant and easy to drink wine. Good with fresh meals such as appetizers, rice and
pasta salads, light meat main courses, fresh cheeses and cold cuts.

 

  

Incanto Rosè Wine Toscana I.G.T.


Grape variety: Cabernet Sauvignon 100%


Exposure: south / south-west
Soil: hilly land with clay textured soil
Growing system: cordon trained
Average vine production: 1,5 kg of clusters


Wine making: grapes are hand-picked and pressed on the same day and the juice spends one day
on the skins. The alcoholic fermentation takes place. The
maturation takes place in stainless-steel tanks for six months. At least four months of ageing in the
bottle.
Tasting notes
Visual aspect: bright pink with purple shades
Nose: intense and fruity, aromas of red fruits. Bottle ageing gives it a more complex structure.
Palate: medium-bodied, pleasantly fresh, fragrant and round with predominating fruity notes
Serving temperature: 6-8°C
Food pairing: suitable both as an aperitif and to accompany any fish or meat based appetizer. Good
with traditional Tuscan dishes such as ‘Caciucco alla Livornese’ (a typical fish and tomato soup).

 

 

 

Alter Ego White Wine Toscana I.G.T.


Grape variety: Chardonnay 100%


Exposure: south / south-east
Soil: hilly land with clay textured soil
Growing system: cordon trained
Average vine production: 2 kg of clusters


Wine making: grapes are hand-picked and pressed on the same day and the juice spends one day
on the skins. The alcoholic fermentation takes place in French oak barrels. Before bottling the wine remains in stainless-steel tanks for six months. At least six
months of ageing in the bottle.
Tasting notes
Visual aspect: pale golden-yellow
Nose: this high quality chardonnay has an elegant touch of wood due to the barrique alcoholic
fermentation
Palate: a fine acidity and well integrated French oak add a touch of elegance to this ripe and rich
wine. Smooth and long finish.
Serving temperature: 6-8°C
Food pairing: suitable both as an aperitif and to accompany any fish based meal. Good with
cheeses and light meat based meals.

 

 

 

 

DIVO   Bianco Toscano IGT

Grapes: 100 % Vermentino


Exposure : South -west
Soil : medium texture trend sandy
Pruning: cordon


Vinification : manual harvesting in boxes, stemmer-crushing ,
one day of maceration on the skins at low temperatures , aging in
steel vats for six months and aged in the bottle for at least 6 months.
Scent : citrus notes , recalling Mediterranean spices and mineral notes .
Taste : fresh and fruity wine with great balance and pleasantness .
Serving temperature : 6-8 degrees
Pairings : It goes with all the preparations of fish , with
Tuscan crostini appetizers , meats and soft cheeses .
